Mother of Gooses recipe for Ermine Frosting

                                                                Ermine frosting

Are you sick and tired of paying a ridiculous amount per pound for butter? Or do you want a change from the regular buttercreams?

Then I have reason to believe that you will be intrigued at least, in love at most with my mother’s Ermine frosting recipe. 

It requires some stove time, very little butter and it tastes good. 

Just follow my instructions carefully. Trust me, you don't want flour lumps.*

                                                                    The recipe


2 cups of milk.

½ of a cup of sugar.

4 tbsp flour.

6 tbsp coconut oil. (Butter if necessary.)

2 tsp salt.

Put the milk in a pot and add the sugar. It should be on medium heat.

Bring milk to a simmer.  

Now turn it down to low and sift in the flour while whisking.

You don't want the flour to have lumps, because that's just… it's not very nice. 

Now take it off heat and let it cool. While it cools, put your coconut oil/butter and salt in a bowl. Beat it with a stand or hand mixer until it's light and fluffy.

Then add the milk mixture and beat it until it's light and fluffy. Now put it on your cake or muffins and… voila!

Ermine frosting!


Baker’s advice: After you sift the flour in and get it incorporated, let the pot cook on low for a few minutes, to get rid of the flour taste.
